I've been making garlic fried rice with an egg whenever I want dinner without much planning. If there's leftover rice, it comes together with whatever vegetables are around, and I don't have to think too hard after a long day.

Keeping a single portion of cooked rice in the freezer means I can still make it when there aren't any leftovers from the night before.

I'd freeze it in a shallow single-portion container so it reheats more evenly. A splash of water and a cover should help keep the rice from drying out.
